Breakfast Quinoa


Quinoa, a high protein seed that originated in the Andean region of Ecuador, Bolivia, Colombia, and Peru, has been classified by the National Academy of Sciences as one of the best sources of protein in the vegetable kingdom. It also provides all of the eight essential amino acids, making it a complete protein. Since I only eat meat a couple of times a week, I have been looking for more ways to incorporate it into my diet. I make a Quinoa Salad, but that was the extent of my quinoa consumption...until Breakfast Quinoa!


Ingredients:

1 cup quinoa
2 cups vanilla hemp milk (or milk with some vanilla added)
2 tablespoons light brown sugar 
1/4 tablespoon cinnamon 
fruit for the top

Directions: 

Combine the milk and quinoa in a saucepan. Bring to a boil. Reduce heat to low and simmer covered until most of the water is absorbed. Stir in sugar and cinnamon, recover, and cook until all of the liquid is absorbed. Approximate cooking time is 15 minutes. Top with fruit and enjoy!

    1. Hi Erin! I have been buying it, but I was actually just talking about trying to make my own. There is an ingredient called carrageenan in the brand that I like that I have been reading bad things about. Besides fresher is always better. I think I may try to make it this week. I will let you know how it goes. :)
